Sweet Potato Salad

Ingredients

3 cups water

9 ounces cubed pared sweet potatoes

1/2 cup canned crushed pineapple (no sugar added)

2 tbsp each diced celery and red onion

1 tbsp minced fresh parsley

2 tsp peanut or vegetable oil

1 tsp raspberry or apple cider vinegar

Dash each cinnamon, ground nutmeg, and white pepper


Method

  • In 1 1/2-quart microwavable casserole combine water and potatoes and microwave on High (100%) for 10 minutes, stirring once halfway through cooking.

  • Drain potatoes, discarding cooking liquid and set aside.

  • In salad bowl combine remaining ingredients; fold in potatoes and serve immediately.
