Ingredients 1/2 cup sliced onion 1 small garlic clove, minced 4 cups thoroughly washed and drained spinach leaves, * torn into bite-size pieces 4 sun-dried tomato halves (not packed in oil), chopped 2 slices crisp bacon, crumbled 1 tbsp each balsamic or red wine vinegar and grated Parmesan cheese

* Four cups fresh spinach yield about 1 cup cooked spinach.
