Spinach and Bacon Saute

Ingredients

2 tsp olive or vegetable oil

1/2 cup sliced onion

1 small garlic clove, minced

4 cups thoroughly washed and drained spinach leaves, * torn into bite-size pieces

4 sun-dried tomato halves (not packed in oil), chopped

2 slices crisp bacon, crumbled

1 tbsp each balsamic or red wine vinegar and grated Parmesan cheese

 

Method

  • In 10-inch skillet heat oil; add onion and garlic and cook over high heat, stirring frequently, until translucent, about 1 minute.

  • Add bacon and vinegar and stir until combine.

  • Transfer to serving platter and sprinkle with cheese.

* Four cups fresh spinach yield about 1 cup cooked spinach.

 

Notes:
