Shredded Beets with Raisins

A sweet and sour side dish that can't be beat!

 

Ingredients

2 cups shredded pared trimmed beets

1/4 cup thinly sliced red onion

2 tbsp golden raisins

2 tsp margarine

1 1/2 tsp firmly packed brown sugar

1/2 tsp raspberry or apple cider vinegar

Dash each salt and pepper

 

Method

  • In 1-quart microwavable casserole combine beet, onion, and raisins.

  • Cover with vented plastic wrap and microwave on High for 3 minutes, until raisings are plumped and beets are softened, stirring halfway through cooking.

  • Add remaining ingredients and stir to combine; cover and let stand for 1 minute.
