Saucy Lentils and Potatoes

Ingredients

1/2 cup cup water

1/2 packet (1/2 tsp) instant chicken broth and seasoning mix

6 seasoning small new red potatoes, quartered

1/2 cup drained canned Italian tomatoes, seeded and diced

1/4 cup diced onion

1 large garlic clove, minced

4 ounces rinsed drained canned lentils

1 tbsp each grated Parmesan cheese and chopped fresh bail or 1/2 tsp basil leaves


Method

  • In 1-quart microwave shallow casserole combine water and broth mix and stir to dissolve broth mix.

  • Add potatoes, cover with vented plastic wrap, and microwave on High (100%) for 5 minutes.

  • Add tomatoes, onion, and stir to combine.

  • Microwave on High, uncovered, for 3 minutes, until onion is tender and flavors blend.

  • Add lentils and stir to combine; microwave on High, uncovered, for 2 minutes until lentils are heated through.

  • Stir in Parmesan cheese and basil.
