Peas and Lettuce Saute

Ingredients

1 tbsp whipped butter

1/2 cup sliced celery

1 cup each frozen tiny peas, frozen pearl onions, and torn green leaf lettuce

1/2 tsp granulated sugar

1/8 tsp each salt and white pepper

1 tbsp chopped fresh mint

 

 

Method

  • In 9-inch skillet melt butter; add celery and saute over medium-high heat until tender, about 1 minute.

  • Add peas and onions and stir to combine.

  • Reduce heat to low, cover, and let simmer until heated through, about 2 minutes.

  • Add lettuce, sugar, salt, and pepper and stir to combine; cook, uncovered, for 1 minute.

  • To serve, transfer vegetable mixture to serving bowl and sprinkle with mint.
