Ingredients
2 cups diagonally sliced carrots
1/4 cup water
1 tbsp each firmly packed light or dark
brown sugar and whipped butter, softened
1/4 tsp cornstarch
1 cup frozen pearl onions
1/4 tsp each ground cinnamon and grated
orange peel
1/8 tsp salt
Method

In 1-quart microwavable shallow
casserole combine carrots and water; cover with vented plastic wrap
and microwave on High (100%) for 4 minutes, until carrots are
tender-crisp.

In cup or small bowl combine sugar,
butter, and cornstarch and mix well to combine; stir into carrot
mixture.

Add remaining ingredients and stir to
combine.

Re-cover with vented plastic wrap and
microwave on High for 3 minutes, until onions are heated through and
mixture thickens.
Notes:

When it comes to vegetable cookery, a
short cooking time using as little water as possible means that
valuable nutrients will be retained. So try to cook vegetables in the
microwave whenever possible, or use a vegetables steamer.
