Mixed Vegetable Soup

Ingredients

3 cups water

1/2 cup each diced onion, celery, carrot, and seeded drained canned Italian tomatoes

1/4 cup each frozen baby lima beans and frozen whole kernel corn

2 packets instant chicken broth and seasoning mix

1 bay leaf

1 tbsp chopped fresh parsley

1/8 tsp pepper

 

Method

  • In 2-quart microwavable casserole combine all ingredients except parsley and pepper and stir to dissolve broth mix.

  • Cover with vented plastic wrap and microwave on High (100%) for 17 minutes, until vegetables are tender, stirring halfway through cooking.

  • Remove and discard bay leaf; stir in parsley and pepper.
