Lentils and Vegetables

Ingredients

1/2 cup sliced mushrooms

1/4 cup each sliced carrot, celery, red bell pepper, and scallions (green onions)

2 tsp margarine

6 ounces rinsed drained canned lentils


Method

  • In small microwave casserole combine vegetables and margarine; cover with vented plastic wrap and microwave on High (100%) for 3 minutes, until softened.

  • Add lentils and microwave on High, uncovered, for 30 seconds, until thoroughly heated.

Notes:

Nutritious lentils are a food staple in India and Middle East. Lentils are always used dried, never fresh, and range in color from brown to yellow-green.
