Greek-Style Potato Salad

Ingredients

9 ounces cooked small red potatoes, quartered

1/4 cup each diced red bell pepper and scallions (green onions)

6 Calamata, Gaeta, or black olives, pitted and chopped

1 tbsp each red wine vinegar, water, and chopped fresh dill or 1/2 tsp dillweed

2 tsp olive oil

1/4 tsp each oregano leaves and pepper

1 ounce feta cheese, crumbled


Method

  • In medium serving bowl combine potatoes, bell pepper, scallions, and olives.

  • In cup or small bowl combine remaining ingredients except cheese and mix well.

  • Pour over potato mixture and toss well to coat.

  • Sprinkle with cheese.
