If you have extra time, prepare the
potatoes for this recipe in advance.
Ingredients
1 tsp margarine
2 tbsp thinly sliced scallion (green
portion only)
3 tbsp half-and-half (blend of milk and
cream)
6 ounces cooked
Method

In 9-inch nonstick skillet melt
margarine; add scallion and saute over medium heat until softened,
about 1 minute.

Add half-and-half and cook, stirring
occasionally, until mixture begins to come to a boil, about 1
minutes; stir in sour cream.

Reduce heat to low; add potatoes, salt,
and pepper and stir to combine.

Cook, stirring frequently, until
potatoes are heated through and mixture thickens, 1 to 2 minutes.
