Ingredients
1/2 ounce pignolias (pine nuts)
2 tbsp whipped butter
1 tbsp dried currants
2 tsp freshly squeezed lemon juice
1 tsp olive or vegetable oil
1 garlic clove, minced
2 cups cooked cauliflower florets (hot)
Dash pepper
Method

On paper plate arrange pignolias and
microwave on High (100%) for 4 minutes, stirring every minute, until
lightly golden; set aside.

In microwavable small bowl combine
butter, currants, lemon juice, oil, and garlic; microwave on High for
30 seconds, until butter is completely melted and mixture bubbles
slightly.

To serve, in serving bowl combine
cauliflower florets, pignolias, and currant mixture and toss to coat;
sprinkle with pepper.
