Cauliflower with Pignolias and Currants

Ingredients

1/2 ounce pignolias (pine nuts)

2 tbsp whipped butter

1 tbsp dried currants

2 tsp freshly squeezed lemon juice

1 tsp olive or vegetable oil

1 garlic clove, minced

2 cups cooked cauliflower florets (hot)

Dash pepper

 

Method

  • On paper plate arrange pignolias and microwave on High (100%) for 4 minutes, stirring every minute, until lightly golden; set aside.

  • In microwavable small bowl combine butter, currants, lemon juice, oil, and garlic; microwave on High for 30 seconds, until butter is completely melted and mixture bubbles slightly.

  • To serve, in serving bowl combine cauliflower florets, pignolias, and currant mixture and toss to coat; sprinkle with pepper.
