Cauliflower in Parmesan-Wine Sauce

This saucy side dish will complement almost any dish, fish, or poultry entree.

 

Ingredients

1 tsp olive or vegetable oil

1/4 cup each chopped red bell pepper and scallions (green onions)

1/2 tsp all-purpose flour

1/4 cup canned ready-to-serve chicken broth

1 tsp dry white table wine

2 cups cauliflower florets, blanched

1/2 ounce grated Parmesan cheese

1 slice crisp bacon, crumbled

1 tsp chopped fresh basil or 1/4 tsp basil leaves

 

Method

  • In 9-inch skillet heat oil; add bell pepper and scallions and cook over medium-high heat, stirring frequently, until bell pepper is tender-crisp, 1 to 2 minutes.

  • Sprinkle flour over vegetables and stir quickly to combine; cook, stirring constantly, for 1 minute.

  • Add broth and wine and, stirring constantly, bring mixture to a boil.

  • Reduce heat to low and stir in remaining ingredients; cook until thoroughly heated, 2 to 3 minutes.
