Bean Slaw

Ingredients

1 small apple (about 1/4 pound), cored and diced

2 tsp lemon juice

2 cups shredded green cabbage

6 ounces rinsed drained canned small white beans

1/2 cup shredded carrot

1 ounce Swiss cheese, shredded

1/4 cup each sliced scallions (green onions), diced red bell pepper, diced green bell pepper, and plain yogurt

1 tbsp plus 1 tsp reduced-calorie mayonnaise

Dash each salt and pepper


Method

  • In medium mixing bowl combine apple and lemon juice and turn to coat; add remaining ingredients and toss to combine.

  • Cover with plastic wrap and refrigerate until flavors blend, about 1 hour.

  • Toss again before serving.
