Spinach Crustless Quiche

Ingredients

 

2 eggs

2 egg whites

1/2 cup low-fat milk

1 (10-ounce) package frozen chopped spinach, thawed and drained

1/2 cup chopped green onions

salt and pepper to taste

1/2 cup part-skim, shredded mozzarella cheese

Method

  • Preheat oven to 375 degree.
  • Spray 8-inch round quiche pan with cooking spray.
  • In large bowl, mix together the eggs, egg whites, and milk.
  • Add the spinach, onions, salt and pepper.
  • Pour into prepared pan.
  • Sprinkle with shredded cheese.
  • Bake 30 to 35 minutes or until quiche is light brown and cooked throughout.
  • Cool slightly before serving.
  • Makes 6 servings.
