Cheese Toasts

Ingredients

 

2 ounces French bread, cut diagonally into 12 equal slices

2 tsp olive or vegetable oil

2 small plum tomatoes, seeded and finely chopped

1/4 cup chopped fresh basil

2 drained canned anchovy fillets, mashed

1/4 tsp oregano leaves

Dash each garlic powder and pepper

2 ounces Gruyere or Swiss cheese, shredded

Garnish: basil leaves

Method

  • Using a pastry brush, brush both sides of each slice of bread with an equal amount of oil and arrange slices in a single layer on nonstick baking sheet.
  • Broil, turning once, until golden, about 30 seconds on each side.
  • In small mixing bowl combine remaining ingredients except cheese and garnish; spoon 1/12 of tomato mixture onto each slice of bread.
  • Using a fork, press mixture evenly over surface of bread; top each with 1/12 of the cheese.
  • Broil until cheese melts, about 1 minute.
  • Transfer to serving platter and garnish with basil leaves.
  • Makes 2 servings, 6 slices each.
