Fat is a complicated nutrient to remove from our food. It is not only
a necessary component to the diet, it adds taste, consistency,
stability, and palatability to our foods. Fat is needed in the diet
for proper growth and development, and it is important in maintaining
overall good health. Additionally, we need fats to transport the
fat-soluble vitamins (vitamins A, D, E, K) throughout the body and
help in their absorption. Even so, food manufacturers have felt the need to crack this market and offer comparative fat substitutes, often called fat replacers, into our food supply. It sounds like a good idea! Wouldn't it be great to offer the real benefit of fat without all those calories that contribute to excess weight gain? Recent years have brought on an abundance of low-fat, reduced-fat, and nonfat products. All intentions were to help reduce the intake of fat (and maybe excess calories and weight) through use of these products.
