Mint Pesto with Pitas |

The pesto, a creamy mixture of fresh mint, raisins, and walnuts, can be stored in a covered container in your refrigerator for up to 2 weeks. Try it tossed with cooked pasta or rice or as a dip with crudites rather than pitas.
Ingredient 1 cup firmly packed fresh mint (reserve 1 mint sprig for garnish) 1/4 cup golden raisins 1/2 ounce walnut halves (reserve 1 walnut half for garnish) 3 tbsp whipped cream cheese 1 tbsp olive or vegetable oil 1 small shallot 4 pitas (1 ounce each), cut into pieces
Method In work bowl of food
processor combine all ingredients except reserved mint sprig, walnut
half, and the pitas and process until smooth, about 1 minute,
scraping down sides of container as necessary. To serve, transfer mixture
to serving bowl and garnish with reserved mint sprig and walnut. Serve with pitas for
dipping. |
