Mint Pesto with Pitas

The pesto, a creamy mixture of fresh mint, raisins, and walnuts, can be stored in a covered container in your refrigerator for up to 2 weeks. Try it tossed with cooked pasta or rice or as a dip with crudites rather than pitas.

 

Ingredient

1 cup firmly packed fresh mint (reserve 1 mint sprig for garnish)

1/4 cup golden raisins

1/2 ounce walnut halves (reserve 1 walnut half for garnish)

3 tbsp whipped cream cheese

1 tbsp olive or vegetable oil

1 small shallot

4 pitas (1 ounce each), cut into pieces

 

Method

  • In work bowl of food processor combine all ingredients except reserved mint sprig, walnut half, and the pitas and process until smooth, about 1 minute, scraping down sides of container as necessary.

  • To serve, transfer mixture to serving bowl and garnish with reserved mint sprig and walnut.

  • Serve with pitas for dipping.

  • Makes 4 servings, about 3 tbsp pesto each.
