Herbed Green Sauce

Few recipe recipes are as versatile as this basil-flavored sauce. Serve it over chilled poached chicken or salmon, toss it with pasta for a delicious side dish, or use it as salad dressing.

 

Ingredient

2/3 cup cottage cheese

1/2 cup evaporated skimmed milk

3 tbsp whipped cream cheese

2 tbsp plus 2 tsp reduced-calorie mayonnaise

2 tbsp lemon juice

1/2 garlic clove

1/4 tsp salt

1/8 tsp ground white pepper

1/2 cup firmly packed basil leaves

 

Method

  • In blender container combiner all ingredients except basil and process on high speed for 2 minutes, scraping down sides of container as necessary.

  • Add basil and process until smooth.

  • Transfer to bowl, cover with plastic wrap, and refrigerate until ready to use.

  • Makes 8 servings, about 1/4 cup each.
