Health Hollandaise Sauce

Ingredients

 

1/2 lb butter or margarine

2 tbsp lemon juice

1/4 tsp sea salt

4 egg yolks

Method

  • Divide butter in thirds.
  • Heat water in lower part of double boiler to boiling point.
  • Let cool slightly to steaming point; adjust heat to keep steaming.
  • Place 1/3 of butter, egg yolks, and lemon juice un upper part of double boiler.
  • Place over steaming water and stir constantly until mixture thickens.
  • Add second piece of butter.
  • When it melts, add the final piece of butter.
  • Keep stirring all the time.
  • When butter is melted, remove from heat, add sea salt, and beat until glossy.
  • Serve at once.
