Method
- Divide butter in thirds.
- Heat water in lower part of double boiler to boiling point.
- Let cool slightly to steaming point; adjust heat to keep
steaming.
- Place 1/3 of butter, egg yolks, and lemon juice un upper part of
double boiler.
- Place over steaming water and stir constantly until mixture
thickens.
- Add second piece of butter.
- When it melts, add the final piece of butter.
- Keep stirring all the time.
- When butter is melted, remove from heat, add sea salt, and beat
until glossy.
- Serve at once.
