Fresh Tomato Coulis

Serve this thick tomato mixture over pasta, rice, poultry, or seafood.

 

Ingredient

1/4 cup minced

1 tbsp plus 1 tsp olive oil

12 large plum tomatoes, blanched, peeled, seeded and chopped

2 bay leaves

1/4 tsp thyme leaves

2 tbsp each minced fresh Italian (flat-leaf) parsley and fresh basil

Dash each salt and pepper

 

Method

  • In 1 1/2-quart microwavable casserole combine shallots (or onion) and oil and stir to coat; microwave on High (100%) for 30 seconds.

  • Add tomatoes, bay leaves, and thyme and stir to continue; microwave on High for 4 minutes, stirring once halfway through cooking.

  • Remove and discard bay leaves.

  • Add parsley, basil, salt, and pepper and stir to combine.

  • Let stand for 1 minute, until flavors blend.

  • Makes 4 servings, about 2/3 cup each.

Notes:

  • Your body will absorb iron better in the presence of vitamin C, so it's a food idea to eat iron-rich foods along with vitamin C-rich foods.
  • Some suggestions: meatballs and spaghetti sauce; a roast beef sandwich with an orange for dessert.
