Fresh Tomato Coulis |

Serve this thick tomato mixture over pasta, rice, poultry, or seafood.
Ingredient 1/4 cup minced 1 tbsp plus 1 tsp olive oil 12 large plum tomatoes, blanched, peeled, seeded and chopped 2 bay leaves 1/4 tsp thyme leaves 2 tbsp each minced fresh Italian (flat-leaf) parsley and fresh basil Dash each salt and pepper
Method In 1 1/2-quart
microwavable casserole combine shallots (or onion) and oil and stir
to coat; microwave on High (100%) for 30 seconds. Add tomatoes, bay leaves,
and thyme and stir to continue; microwave on High for 4 minutes,
stirring once halfway through cooking. Remove and discard bay
leaves. Add parsley, basil, salt,
and pepper and stir to combine. Let stand for 1 minute,
