Citrus Salsa

Serve over broiled chicken or fish.

 

Ingredient

1/2 cup orange and grapefruit sections (no sugar added), diced

2 tbsp each minced red onion and green bell pepper

1 tbsp each chopped fresh cilantro (Chinese parsley) or Italian (flat-leaf) parsley and lime juice (no sugar added)

2 tsp olive oil

1 tsp seeded and minced jalapeno pepper

1/2 tsp salt

 Dash ground pepper

 

Method

  • In small bowl combine all ingredients and mix well.

  • Cover with plastic wrap and refrigerate until ready to serve.

  • just before serving, stir well.

  • Makes 2 servings, about 1/3 cup each.
