Avocado Relish

A colorful addition to broiled chicken or fish.

 

Ingredient

1/2 medium avocado (about 1/4 pound), pared and finely diced

2 tbsp lime juice (no sugar added)

1/4 cup each diced red onion, red bell pepper, and green bell pepper

2 large plum tomatoes, diced

1 tbsp each chopped fresh cilantro (Chinese parsley) or Italian (flat-leaf), and seeded mil or hot chili pepper

2 small garlic cloves, chopped

2 tsp olive or vegetable oil

Dash each salt and pepper

 

Method

  • In small bowl combine avocado and lime juice; set aside.

  • In separate small bowl combine remaining ingredients and mix well; carefully fold in avocado mixture.

  • Cover with plastic wrap and refrigerate until flavors blend, at least 30 minutes.

  • Just before serving, stir well.

  • Makes 4 servings, about 1/2 cup each.
