If you like the speed of the microwave oven but the crispness the
broiler can produce, you might want to use both appliances for this
recipe. Cook the chicken in the microwave oven as the recipe directs,
then top with the spicy sauce, and broil on a rack in the broiling pan
for 2 to 3 minutes.
Ingredients
1 cup sliced onions
2 chicken breasts (6 ounces each), skinned
3 tbsp ketchup
1 tbsp each apple cider vinegar and freshly squeezed lemon juice
1 tsp light or dark molasses
1 garlic clove, minced
¼ tsp each Worcestershire sauce and hot sauce
Method
In 8 x 8 x 2-inch microwavable baking dish arrange onions; set chicken
breasts, skinned side up, over onions.
Cover with vented plastic wrap
and microwave on High (100%) for 5 minutes, until chicken is cooked
through.
In small mixing bowl combine remaining ingredients; spread over chicken
breasts.
Microwave on High for 2 minutes until sauce is heated through.
MAKES 2 SERVINGS.
