Sweet and Sour Chicken Salad

Ingredients

 

5 ounces diced cooked chicken (1/4-inch pieces)

1/2 cup minced celery

1 medium apricot (about 1 1/4 ounces), pitted and diced, or 2 dried apricot halves, diced

2 tbsp each minced scallion (green onion) and sour cream

1 tbsp plus 1 tsp reduced-calorie mayonnaise

1 tbsp apple cider vinegar

2 tsp apricot preserves

1/8 tsp salt


Method

  • In serving bowl combine chicken, celery, apricot, and scallion.

  • In small bowl combine remaining ingredients; pour over chicken mixture and stir well to combine.

  • MAKES 2 SERVINGS.
