Celebrate a special occasion with this delicious recipe.
Ingredients
3 tbsp teriyaki sauce
1 tbsp each honey and freshly squeezed lemon juice
¼ tsp each grated orange peel and grated lemon peel
1 Cornish hen (1¼ pounds * ), cut in half
¼ cup canned ready-to-serve chicken broth
1 tsp each cornstarch and sesame seed, toasted
Method
In shallow medium mixing bowl (not aluminum **) combine teriyaki sauce,
honey, lemon juice, orange peel and lemon peel; stir to combine.
Add hen halves and turn to thoroughly coat with marinade.
Cover with plastic wrap and refrigerate at least 30 minutes.
Preheat broiler.
Arrange hen halves skin-side up on rack in broiling pan, reserving
marinade, and broil 6 to 8 inches from heat source for 12 to 15
minutes; turn halves over and broil until lightly browned and cooked
through, 12 to 15 minutes.
While hen is broiling prepare sauce.
Transfer marinade mixture to small nonstick saucepan; add broth and
cornstarch and stir to dissolve cornstarch.
Cook over medium-high heat, stirring constantly, until mixture comes to
a boil and thickens, 2 to 3 minutes.
To serve, remove and discard skin from hen; transfer hen halves to
serving platter, top with sauce, and sprinkle with sesame seed.
MAKES 2 SERVINGS
* A 1 1/4-pound Cornish hen yields about
1/2 pound cooked poultry.
** It is best to marinate in glass or stainless-steel containers;
ingredients such as teriyaki sauce and lemon juice may react with
aluminum, causing color and flavor changes in food. |
