Ingredients
¼ cup each finely chopped onion and red bell pepper
1 small jalapeno pepper, seeded and minced
1 garlic clove, minced
5 ounces ground turkey
¼ cup part-skim ricotta cheese
1 tsp each chili powder and chopped fresh cilantro (Chinese parsley)
or Italian (flat-leaf) parsley
1/8 tsp each salt and pepper
4 tomato slices
1 ounce Cheddar cheese, shredded
2 large pitted black olives, sliced
Method

In medium microwavable mixing bowl combine onion, peppers and garlic;
cover with vented plastic wrap and microwave on High (100%) for 1
minute, until vegetables are tender-crisp.

Add turkey, ricotta cheese,
chili powder, cilantro (or parsley), salt and pepper; mix well until
thoroughly combined.

Transfer mixture to microwavable roasting rack and
shape into a loaf; cover with vented plastic wrap and microwave on High
for 3 minutes.

Rotate rack ½ turn, uncover, and microwave on High, for
3 minutes.

Top loaf with tomato slices and then sprinkle with Cheddar
cheese; microwave on High for 1 minute, until cheese melts.

Top with
olive slices.
