An elegant recipe for that special dinner.
Ingredients
1 Cornish hen (1¼ pounds), cut in half
½ cup canned ready-to-serve chicken broth
1 tbsp each all-purpose flour, freshly squeezed lemon juice and sour
cream
1 tsp chopped fresh dill or ½ tsp dillweed
1/8 tsp each salt and white pepper
Method
On microwavable baking sheet arrange hen halves skin-side up; cover
with vented plastic wrap and microwave on High (100%) for 10 minutes,
until cooked through, rotating baking sheet ½ turn halfway through
cooking.
Set aside and keep warm.
In small microwavable mixing bowl combine broth and flour and stir to
dissolve flour; microwave on High for 2 minutes, stirring halfway
through cooking.
Stir in remaining ingredients.
To serve, remove and discard skin from hen.
Arrange hen halves on
serving platter and top with sauce.
