Curried Cream of Chicken Soup

Ingredients

1 tbsp whipped butter

1 tsp margarine

1 garlic clove, minced

1 tbsp plus 1½ tsp all-purpose flour

1 cup water

½ cup evaporated skimmed milk

1 packet instant chicken broth and seasoning mix

1 ounce diced cooked chicken (¼-inch pieces)

¼ tsp curry powder

Method

  • In medium microwavable bowl combine butter, margarine and garlic and microwave on High (100%) for 1 minute, until butter and margarine are melted. 

  • Sprinkle flour over butter mixture and, using a wire whisk, stir to combine. 

  • Gradually stir in water and milk; stir in broth mix. 

  • Microwave on High for 3 minutes, stirring every minute. 

  • Add chicken and curry powder and stir to combine; microwave on High for 30 seconds, until chicken is heated through.

  • MAKES 2 SERVINGS, ABOUT ¾ CUP EACH.

Notes:

Curry powder is actually a blend of many herbs and spices: turmeric, coriander, black and red peppers, cumin, cardamom, cinnamon, ginger, mace, fenugreek, bay leaves, saffron, and mustard seed. In India, curry powders are blended by hand so every household has it won unique mixture.
