Chicken Vegetable Couscous

Ingredients


2 boneless, skinless chicken breast

1 (10-ounce) package couscous

1 (14-ounce) can chicken or vegetable broth

3 large tomatoes, finely chopped

2 garlic cloves, minced

2 tbsp fresh basil, finely chopped

2 tbsp balsamic vinegar

salt and pepper to taste

1/4 cup feta cheese, crumbled

Method

  • Bake, boil, or broil chicken breasts.

  • Cool slightly.

  • Slice into thin strips.

  • Prepare couscous according to package directions, using chicken broth in place of water. (Do not add margarine or oil as directed).

  • When couscous is done, pour it out into a large bowl.

  • Toss with chopped tomatoes, garlic, basil, vinegar, and salt and pepper.

  • Add chicken strips and crumbled feta cheese on top to serve.

  • MAKES 6 SERVINGS.
