Ingredients
2 boneless, skinless chicken breast
1 (10-ounce) package couscous
1 (14-ounce) can chicken or vegetable
broth
3 large tomatoes, finely chopped
2 garlic cloves, minced
2 tbsp fresh basil, finely chopped
2 tbsp balsamic vinegar
salt and pepper to taste
1/4 cup feta cheese, crumbled
Method

Bake, boil, or broil chicken breasts.

Cool slightly.

Slice into thin strips.

Prepare couscous according to package
directions, using chicken broth in place of water. (Do not add
margarine or oil as directed).

When couscous is done, pour it out into
a large bowl.

Toss with chopped tomatoes, garlic,
basil, vinegar, and salt and pepper.

Add chicken strips and crumbled feta
cheese on top to serve.
