Try this winning salad when you have leftover cooked sweet potato or yam.
Ingredients 2 tbsp plus 2 tsp apple juice (no sugar added) 1 tbsp apple cider vinegar 2 tsp olive oil 1 tsp Dijon-style mustard 3 cups spinach leaves, trimmed, thoroughly washed, drained, and torn into bite-size pieces 3 ounces diced cooked sweet potato or yam 1 ounce Swiss cheese, shredded
