Warm Spinach and Ham Salad

Try this winning salad when you have leftover cooked sweet potato or yam.

 

Ingredients

3 ounces cooked smoked ham

2 tbsp plus 2 tsp apple juice (no sugar added)

1 tbsp apple cider vinegar

2 tsp olive oil

1 tsp Dijon-style mustard

3 cups spinach leaves, trimmed, thoroughly washed, drained, and torn into bite-size pieces

3 ounces diced cooked sweet potato or yam

1 ounce Swiss cheese, shredded


Method

  • On microwavable plate arrange ham and microwave on High (100%) for 1 minute, until header through; dice and set aside.

  • In microwavable cup or small bowl combine apple juice, vinegar, oil, and mustard and microwave on High for 1 minute, until heated through.

  • To serve, in serving bowl combine spinach, potato, and ham and toss to combine.

  • Pour vinegar mixture over salad and toss to coat.

  • Sprinkle with cheese.

  • MAKES 2 SERVINGS.

Note:

  • Cooking a potato in its skin retains the nutrients; if need be, the skin can easily be removed after cooking.
