Smoked Ham and Squash Gratin

Ingredients

1/4 pound each julienne-cut pared butternut squash and cooked smoked ham (matchstick pieces)

2 ounces Gruyene or Swiss cheese, shredded, divided

1/4 cup thoroughly washed sliced leek (white portion only)

1 tbsp all-purpose flour

1/2 cup evaporated skimmed milk, divided

1/8 tsp white pepper

Dash ground nutmeg

3 tbsp plain dried bread crumbs


Method

  • In medium mixing bowl combine squash, ham, 1 ounce cheese, and the leek; sprinkle flour over squash-ham mixture and mix well.

  • Add milk and stir well to thoroughly combine.

  • Spray 8x8x2-inch flameproof microwavable baking dish with nonstick cooking spray; spread squash-ham mixture in baking dish and microwave on High (100%) for 4 minutes until leek is tender-crisp, stirring mixture and rotating baking dish 1/2 turn halfway through cooking.

  • Add pepper and nutmeg and stir to combine.

  • In small bowl combine remaining 1 ounce cheese and the bread crumbs; sprinkle over squash-ham mixture.

  • Preheat broiler.

  • Transfer baking dish to broiler and broil 5 to 6 inches from heat source until crumb mixture is lightly browned, 1 to 2 minutes.
