Portuguese Lamb

Ingredients

3/4 cup canned ready-to-serve beef broth

1/2 cup julienne-cut red bell pepper (matchstick pieces)

1/4 cup each sliced onion and dry red table wine

1 ounce diced prosciutto (Italian style ham)

2 garlic cloves, minced

2 tsp all-purpose flour

1/2 tsp paprika

7 ounces lamb cubes (1/2-inch cubes), broiled until medium

Dash pepper


Method

  • In 1-quart microwavable shallow casserole combine all ingredients except lamb and dash pepper and stir until flour is dissolved; microwave on High (100%) for 5 minutes, until mixture thickens, stirring every 2 minutes.

  • Add lamb and stir to combine; microwave on High for 1 minute, until lamb is heated through.

  • Stir in pepper.

  • MAKES 2 SERVINGS.
