Fruited Ham Salad

Ingredients

1/4 pound died boiled or cooked smoked ham

2 tbsp each golden raisins, dived green bell pepper, diced celery, and diced red onion or scallion (green onion)

2 tsp country Dijon-style mustard

1 tsp honey

8 lettuce leaves

1/2 medium tomato, sliced


Method

  • In small mixing bowl combine all ingredients except lettuce and tomato and stir until thoroughly blended.

  • To serve, line center of servicing platter with lettuce leaves and arrange tomato slices along side of platter; top lettuce with ham mixture.

  • MAKES 2 SERVINGS.
