Beef Bourguignonne

Ingredients

1 cup quartered mushrooms

1/2 cup each frozen pearls onions, sliced carrot, and canned ready-to-serve beef broth

1/4 cup each dry red table wine and canned crushed tomatoes

1 tbsp tomato paste

2 tsp all-purpose flour

1 garlic clove, minced

1/2 pound boneless beef sirloin, cut into 1-inch cubes; broiled until medium

1/4 tsp rosemary leaves

1/8 leaves each salt and pepper


Method

  • In 1-quart microwavable casserole combine all ingredients except beef, rosemary, slat, and pepper and stir to dissolve tomato paste and flour.

  • Microwave on High (100%) for 5 minutes, until mixture thickens and vegetables are tender, stirring every 2 minutes.

  • Add remaining ingredients and stir to combine; microwave on High for 1 minutes until beef is heated through.

  • MAKES 2 SERVINGS.

Notes:

The leanest cuts of beef are top round, eye of the round, tip round, sirloin, top loin, and tenderloin. Look for them when you shop.
