Succulent Nutcakes

Ingredients

2 beaten eggs

2 cups milk

4 cups diced stale bread

2 tbsp peanut oil

2 tbsp chopped onion

Sage

3/4 cup tomato juice

1 cup nuts, ground fine


Method

  • Mix eggs and milk and pour over diced bread.

  • Let stand for 20 minutes.

  • Heat the oil in a skillet and simmer the onions but do not brown.

  • Add the sage and tomato juice.

  • Bring to a boil.

  • Mix all the ingredients together, put in oiled muffin tins and bake until set.
