Soybean Stuffed Green Peppers

Ingredients

4 green peppers

1/2 tsp vegetized seasoning

1/4 cup diced cucumber

2 cups cooked soybeans

1/4 cup diced celery

2 ripe tomatoes

1 tsp minced chives

1/4 tsp thyme

1/4 minced onion


Method

  • Remove seeds from green peppers by slicing off top near the steam, the hollowing.

  • Boil slowly for 5 minutes.

  • Rub inside with vegetized seasoning.

  • Mash soybeans.

  • Now cook celery and cucumber until almost tender.

  • Peel and section tomatoes and cut into wedges.

  • Make a mash of beans, vegetables, and seasoning.

  • Stuff hollowed peppers; if desired, sprinkle with whole wheat bread crumbs.

  • Bake in moderate oven, 350 degree F about 25 minutes.
