Soybean Roast

Ingredients

1/2 cup tomato juice

1 chopped onion

2 eggs

sage

1 1/2 cups cooked soybeans

1/2 cup whole grain cereal, cooked

1 1/2 cups cooked carrots

1 1/2 cups cooked celery

vegetized seasoning


Method

  • Mash together the soybeans, celery, and carrots.

  • Now add cooked cereal, tomato juice, chopped onion, and beaten eggs.

  • Mix and season to taste.

  • Flavor is best if moist; if too dry, add more tomato juice.

  • Place in an oiled pan.

  • Bake 45 minutes in a moderate oven.
