Soybeans Cutlets

Ingredients

2 cups cooked soybeans

1 cup cooked celery

1 cup cooked carrots

1 tbsp powdered vegetable broth

1/4 cup Melba toast crumbs

Sliced tomato


Method

  • Mash soybeans and add cooked vegetables.

  • Melba toast crumbs, and vegetable broth.

  • Mix well.

  • Place in oiled loaf pan, top with sliced tomatoes.

  • Bake in a hot oven 20 or 30 minutes.

  • Serve in slices, to resemble cutlets.
