Ingredients 2 cups cooked soybeans
1 cup cooked celery
1 cup cooked carrots
1 tbsp powdered vegetable broth
1/4 cup Melba toast crumbs
Sliced tomato
Method
Mash soybeans and add cooked vegetables.
Melba toast crumbs, and vegetable broth.
Mix well.
Place in oiled loaf pan, top with sliced tomatoes.
Bake in a hot oven 20 or 30 minutes.
Serve in slices, to resemble cutlets.
