Ingredients
4 eggs
4 tbsp milk
2 tbsp vegetable oil
2 cups sprouted soybeans
1/2 cup onion tops (or scallions)
Method

Beat eggs lightly, add milk and
seasoning.

Steam oil in the omelet pan.

Pour in mixture, bean sprouts, and
onion tops (or scallions).

Let it brown.

Lift cooked part slightly with spatula,
occasionally, to let uncooked part slide under for overall browning.

Let pan heat quickly to enable this
omelet to cook properly.
