Soy Sprouts En Omelette

Ingredients

4 eggs

4 tbsp milk

2 tbsp vegetable oil

2 cups sprouted soybeans

1/2 cup onion tops (or scallions)


Method

  • Beat eggs lightly, add milk and seasoning.

  • Steam oil in the omelet pan.

  • Pour in mixture, bean sprouts, and onion tops (or scallions).

  • Let it brown.

  • Lift cooked part slightly with spatula, occasionally, to let uncooked part slide under for overall browning.

  • Let pan heat quickly to enable this omelet to cook properly.

  • A nourishing breakfast.
