Ingredients
1 eggplant
1 green pepper
1 small onion
2 cups tomato wedges
1/3 cup soy granules
Desired seasonings
Method

Peel and dice eggplant.

Put a layer of eggplant on casserole.

Cover with layer of chopped green
pepper and onion, then sprinkle on the soy granules.

Put in rest of pepper and onions, then
add tomatoes.

Cover and bake 40 minutes in a moderate
oven, 350oF.
