Soy-Eggplant Casserole

Ingredients

1 eggplant

1 green pepper

1 small onion

2 cups tomato wedges

1/3 cup soy granules

Desired seasonings


Method

  • Peel and dice eggplant.

  • Put a layer of eggplant on casserole.

  • Cover with layer of chopped green pepper and onion, then sprinkle on the soy granules.

  • Put in rest of pepper and onions, then add tomatoes.

  • Cover and bake 40 minutes in a moderate oven, 350oF.
