Soy Cheese Casserole

Ingredients

2 tbsp vegetable oil

1 large onion, diced

1 1/2 cups water

1 tbsp active dry yeast

1 tsp vegetable broth, powdered

1 1/2 tbsp whole grain flour

2 cups soy cheese

1 tbsp minced parsley

Mashed potatoes


Method

  • Steam diced onion in oil; add water, yeast.

  • Thicken with flour rubbed smooth with some cold water.

  • Add soy cheese and minced parsley.

  • Place in oiled casserole and top with mashed potatoes.

  • Bake in moderate potatoes.

  • Bake in moderate oven, 325 degree F until light brown.
