Scrambled Eggs with Sprouts

Ingredients

1/2 cup onion tops, chopped fine

1 1/2 tsp sea salt

4 eggs, slightly beaten

2 cups sprouts

1 tbsp oil


Method

  • Add chopped onion tops and salt to slightly beaten eggs.

  • Let stand 5 to 10 minutes.

  • Wash and cook the sprouts 10 minutes, in skillet with just enough water to cling to the,

  • Stir to prevent sticking to pan.

  • Add oil and cook 5 more minutes.

  • Add egg mixture and stir.

  • Cook until done.
