Nut Jambalaya

Ingredients

1/2 cup kidney beans

1 tbsp oil

1 bell pepper, diced

1/2 cup nutmeats, chopped

1/2 tsp sea salt

1 cup tomato wedges

1/2 cup grated coconut

1/4 lb uncooked natural brown rice


Method

  • Wash and boil the beans.

  • Put the oil in a saucepan, add the peppers, nutmeats, salt, tomatoes, and coconut.

  • Stir the ingredients until they boil, then add the beans.

  • Let the mixture simmer over hot water for 20 minutes or while the rice is boiling.

  • Place the rice at each end of a large platter with the jambalaya occupying the center.
