Ingredients
1/2 cup kidney beans
1 tbsp oil
1 bell pepper, diced
1/2 cup nutmeats, chopped
1/2 tsp sea salt
1 cup tomato wedges
1/2 cup grated coconut
1/4 lb uncooked natural brown rice
Method

Wash and boil the beans.

Put the oil in a saucepan, add the
peppers, nutmeats, salt, tomatoes, and coconut.

Stir the ingredients until they boil,
then add the beans.

Let the mixture simmer over hot water
for 20 minutes or while the rice is boiling.

Place the rice at each end of a large
platter with the jambalaya occupying the center.
