Lemon-Flavored Soy Cheese

Ingredients

1 cup full-fat soy flour

3 cups water

Juice of 2 lemons


Method

  • Bring water to a boil in a saucepan.

  • Now mix 1 cup of flour to a paste with cold water.

  • Beat with a wire whisk about 1 minutes and add to boiling water.

  • Let cook about 5 minutes and now add lemon juice.

  • Set mixture aside to cool.

  • Strain curds through a fine strainer or cheesecloth.
