Baked Soybean Croquettes

Ingredients

2 tbsp minced onion

1 1/2 cups diced celery

1 1.2 tsp sea salt

1 cup tomato juice

5 tbsp whole grain flour

2 tbsp vegetable oil

3 cups soybean mash

whole grain cornflakes

1 egg, well beaten

2 tbsp milk


Method

  • Add minced onion, celery (tough celery should be parboiled), and sea salt to tomato juice and bring to a boil.

  • Mix flour and oil together, and add the boiling tomato mixture slowly.

  • Cook to a thick paste.

  • Cool and add soybean mash.

  • Shape into croquettes.

  • Roll in cornflakes, then in beaten egg to which milk has been added, and again in cornflakes.

  • Place on a greased baking dish and bake in a hot oven, 410 degree F from 20 to 35 minutes.
