Ingredients
5 ounces cubed fresh tuna
½ cup each diced celery and red onion
2 tbsp diced green bell pepper
2 tsp olive or vegetable oil
½ medium tomato, diced
2 tsp apple cider vinegar
1 tsp freshly squeezed lemon juice
¼ tsp salt
1/8 tsp grated lemon peel
Dash pepper
4 lettuce leaves
Method

In 2-cup microwavable casserole combine tuna, celery, onion, bell
pepper and oil and stir to thoroughly coat.

Microwave on Medium-High (70%) for 4 minutes.

Add remaining ingredients except lettuce and stir
to thoroughly combine.

Let stand until fish is cooked through and
flakes easily when tested with a fork and flavors blend, about 5
minutes.

To serve, line serving platter with lettuce, toss tuna mixture and
arrange on lettuce.
