Sea Slaw Salad

Ingredients

6 ounces thawed frozen imitation fish, flaked
2 cups finely shredded green cabbage
1 cup grated carrots
¼ cup each diced onion, celery, green pepper and plain low-fat yogurt
1 tbsp plus 1 tsp reduced calorie mayonnaise
1 tbsp chopped fresh Italian (flat-leaf) parsley or fresh dill
2 tsp ketchup
1 tsp pickle relish
½ tsp each prepared horseradish, lemon juice, Dijon-style mustard and Worcestershire sauce

Method

  • In large salad bowl combine imitation fish and vegetables.

  • In small mixing bowl combine remaining ingredients; pour over salad and toss to coat.

  • Serve immediately or cover and refrigerate until ready to serve.

  • MAKES 2 SERVINGS.
