Ingredients
1 tbsp all-purpose flour
Dash each salt and pepper
½ pound snapper fillets
1 tbsp olive or vegetable oil, divided
½ cup diced red onion
1 small garlic clove, minced
½ cup tomato sauce
Method

On sheet of wax paper or a paper plate combine flour, salt and pepper;
dredge fish in flour mixture, coating both sides.

In 9-inch nonstick skillet heat oil; add fish and cook over medium-high
heat, turning once, until browned and fish flakes easily when tested
with a fork, about 2 minutes on each side.

Transfer fish to serving
platter; set aside and keep warm.

In same skillet combine onion and garlic and cook over medium heat
until onion is translucent, about 2 minutes.

Stir in tomato sauce and
cook, stirring frequently, until thoroughly heated, about 2 minutes.

To serve, top fish with tomato sauce.
