Ingredients
2 tsp each olive oil and freshly squeezed lemon juice
1 scrod of flounder fillet (7 ounces), cut in half crosswise
½ ounce grated Parmesan cheese, divided
Method
Preheat broiler.
In cup or small bowl combine oil and lemon juice.
On nonstick baking sheet arrange fillets in a single layer and, using
pastry brush, brush both sides of each fillet with ¼ of the oil
mixture.
Sprinkle top of each fillet with half of the cheese.
Broil until golden brown and fish flakes easily when tested with a
fork, 3 to 4 minutes.
MAKES 2 SERVINGS.
