Microwave “Fried” Fish  

The microwave oven gives you crispy fish fillets in a flash.
 

Ingredients


1 tbsp plus 1˝ tsp plain dried bread crumbs
˝ tsp grated Parmesan cheese
1/8 tsp basil leaves
Dash pepper
2 tsp margarine
2 lemon or gray sole fillets (3 ounces each)

Method

  • On sheet of wax paper or a paper plate combine bread crumbs, cheese, basil and pepper and stir to thoroughly combine; set aside.

  • In microwavable cup microwave margarine on High (100%) for 30 seconds, until melted.

  • Brush both sides of each fillet with melted margarine, using all of the margarine, and then dredge each fillet in bread crumb mixture, lightly coating both sides.

  • Place each fillet on a sheet of paper towel; fold sides of each towel over each fillet to enclose, and arrange folded sides down on microwavable plate.

  • Microwave on Medium-High (70%) for 2 minutes.

  • Let stand for 2 minutes, until fish is cooked through and flakes easily when tested with a fork. Remove and discard paper towel.

  • MAKES 2 SERVINGS.
