The microwave oven gives you crispy fish fillets in a flash.
Ingredients
1 tbsp plus 1˝ tsp plain dried bread crumbs
˝ tsp grated Parmesan cheese
1/8 tsp basil leaves
Dash pepper
2 tsp margarine
2 lemon or gray sole fillets (3 ounces each)
Method
On sheet of wax paper or a paper plate combine bread crumbs, cheese,
basil and pepper and stir to thoroughly combine; set aside.
In
microwavable cup microwave margarine on High (100%) for 30 seconds,
until melted.
Brush both sides of each fillet with melted margarine,
using all of the margarine, and then dredge each fillet in bread crumb
mixture, lightly coating both sides.
Place each fillet on a sheet of
paper towel; fold sides of each towel over each fillet to enclose, and
arrange folded sides down on microwavable plate.
Microwave on
Medium-High (70%) for 2 minutes.
Let stand for 2 minutes, until fish is
cooked through and flakes easily when tested with a fork. Remove and
discard paper towel.
